thank you. I am always into recipes! I am a Halal religious diet and that leaves me very very few options of eating outside the home, so I am always cooking. I have never been a fan of drinking milk but I have always been a big cheese eater...however over the last ten years I became lactose intolerant so I had to reduce my cheese intake. No biggie for me because I like my diet a lot lighter these days anyway. I am not dairy free, but pretty close to it. I hardly ever eat red meat of any kind. I don't eat bread often. My main proteins are beans and fish simply because we love both in my home. I will admit that during the entire day, I try to make sure that more than 2/3 of my total food intake is not cooked in any way. I have hypoglycemia and I really react poorly to juices and sweetened beverages so we are a water based family. I prefer to simply not drink my sugars, save that for the occasional treat! Looking forward to viewing some recipes!
Thank you Leslie. I did a little shopping today, as you see on the new recipe group created today. This is wonderful help to me and probably many others.
Mornings are usually freezer waffles (of course checked for bad ingredients) and peanut butter. I drink a lot of milk because most other liquids don't work well with me, though I've found most rooibos teas work okay. I snack a lot throughout the day to keep my blood sugar levels stable, then do a largish meal at night (I work better at night, so I try to give myself a boost at night). For instance tonight we had home-made crunchwraps (like the ones you get at taco bell), but without tomatoes, sour cream, etc.
For me, the most important thing is reading the ingredients in anything I put in my mouth. I have to avoid most fruits like the plague, and that goes for most fruit juices as well. I can't drink coffee at all anymore (I used to be a coffeeholic), so I drink a lot of tea instead. One thing I have found is I can only have tomatoes is they are heirloom varieties. For some reason heirlooms have less acid naturally, and when I can afford them, I make batches of tomato sauce and freeze it, then make my own pizza (pizza is still a MAJOR love of course). We don't eat out at very many places because of my allergies; a small amount of citric acid can and has landed me in the ER before in very nasty bladder pain.
I've gotten so that I dont' miss very many foods anymore. I am a big foodie, and I love to cook, so I don't feel like I'm being deprived, most of my favorite dishes I've figured out how to fudge with different ingredients. For instance I use greek yogurt as sour cream in a lot of recipes, and I actually think it tastes better!
Hey, you're not far from me! (I live in Beaverton).
I've found a lot of grocery stores in teh area are getting better about stocking GF. Especially try Whole Foods and New Seasons, they are both higher end all natural stores, but they have some really nice products.
Gluten, dairy products, caffine and sugars usually make me feel worse..

I also eliminate the above as best I can. Although I still have symptoms, they are much worse when I include the above. If you have any recipes you would like to share, join the group Recipes for Special Diets. :)
Can you share some of the recipes on the group Recipes for Special Diets? Would love to have new recipes to add to my file!
