Crockpot or Easy Meals?

So, I’m new to all this and I love to cook. However, I haven’t felt like it lately due to hurtin so we’ve been doing frozen foods, sandwiches, and eating out. My sweet mom hasn’t said anything but I know she’s ready for a real meal (she’s disabled with a bad back, arthritis, and COPD so is unable to do much cooking). That being said I’m looking for crockpot recipes or ideas for easy meals. I’ll add a few recipes later tonight.

I’m planning to make Crockpot Meatloaf on a Bed of Potatoes tomorrow.

2 pounds ground beef
1 packet brown gravy mix
1 egg
1 small onion (chopped)
1 green bell pepper chopped (optional)
1 cup bread crumbs
1 cup milk
1 small can tomato sauce (half in meat mixture, half on top)
6-8 small potatoes cut in halves or quartered

Put potatoes in greased crock pot, toss with a little oil. Mix other ingredients together, saving half the can of tomato sauce to put on top. Place meat mixture on top of potatoes. Top with tomato sauce left in can. Cover and cook on low for 8-10 hours or high for 4-6 hours.

*I usually take the half can of tomato sauce, mix in some garlic powder, salt and pepper, and brown sugar. To top my meatloaf with.

The potatoes soak up some of the flavor from the meatloaf and are good. My brothers love this.

I got really creative with my co-workers over the past year... I was the party planner and would get people involved bringing foods in for the planned day...well I myself got tired of the same old finger foods. SOOOO I uped the game and brought spagattii in the crock pot ...now mind you I had to pre cook everything but it was very good... The next time I did lasagna now that was a hit as well and the best lasagna I ever made... again I pre cooked everything and layered it in the crock pot then placed it in the fridge until the next morning... took it to work plugged it up put on low and in 4 hours the best lasagna ever!!!! I also enjoy doing a roast for my family and a ham cooks up nice in a crock pot...

Tonight I made pigs in a blanket but used polish sausage and wrapped them in crescents and made Mac and cheese for the side:)

Allrecipes.com has great slow cooker recipes. Also read the comments as I have altered original recipes due to comments others have posted. I cook most meals in slow cooker now and made an amazing chicken taco soup for this week.

The Best Crockpot BBQ Chicken

Ingredients

2 lbs boneless, skinless chicken breasts

1 cup BBQ sauce

1/4 cup Zesty Italian dressing 1/4 cup brown sugar 1 tbsp Worcestershire sauce

salt to taste

Directions

1. Season chicken breast lightly (a small pinch per breast) with some sea salt and place in your crockpot.

2. In a mixing bowl combine BBQ sauce, Italian dressing, brown sugar and Worcestershire sauce. Stir until well combined

3. Pour over chicken, cover and cook on HIGH for 3-4 hours

4. Once time is up, you can serve the breast whole, or shred with 2 forks. If shredding, recover and let cook in sauce for about 10-15 more minutes to soak up all that delish flavor.

Serve on buns, over rice, in wraps, on a salad or eat a plateful as is! Our favorite way is on fresh rolls, topped with coleslaw.

I do both its all i can do lately…thank god my fiance loves to cook on weekends he does all the cooking.

Black Beans & Rice
1 chopped red onion
3 cloves garlic (minced or pressed)
1/4 tsp each - salt, fresh ground black pepper, cumin, Cajun seasoning (Tony Cachere or Zararans)
1/2 tsp dry parsley
1 can each of - black beans, chick peas, diced tomatoes
1 pound thinly sliced Hillshire Farms sausage - you can use other brands. It’s the horseshoe shaped sausage.
1/4 cup water (for crockpot only)

Add all ingredients to crockpot, do not drain beans or tomatoes. Cook on low 6-8 hours, OR on the stovetop for an hour on med heat. It’s better cooked all day

Serve over a good rice like Basmati.

An easy one to do is beef tips and noodles. Not too long ago I made beef tips in the crock pot added a jar of gravey and a bag of no yolks and we were good to go. Now apparently I made way too much so I stuck the crock in the fridge and the next day I put it back on to heat it back up, sautéed up some pre-sliced mushrooms and onions, added another jar of gravey and a tbs of brown mustard and let it cook a little. Then I added that mix and about half a cup one sour cream and we had stroganoff. Good luck. Hope you get lots of recipes and a good place to look that no one ever thinks of is the library.

TOTAL TIME: Prep: 20 min. Total: 4 Hours 20 min.
MAKES: 8 servings

Ingredients

  • 1 pound ground beef
  • 1 jar (24 oz.) spaghetti sauce
  • 1 cup water
  • 1 container (15 oz.) POLLY-O Natural Part Skim Ricotta Cheese
  • 1 package (7 oz.) KRAFT® 2% Milk Shredded Mozzarella Cheese, divided
  • 1/4 cup KRAFT® Grated Parmesan Cheese, divided
  • 1 egg
  • 2 tablespoons chopped fresh parsley
  • 6 lasagna noodles, uncooked
Directions
  1. BROWN meat in large skillet; drain. Stir in spaghetti sauce and water. Mix ricotta, 1-1/2 cups mozzarella, 2 Tbsp. Parmesan, egg and parsley.
  2. SPOON 1 cup meat sauce into slow cooker; top with layers of half each of the noodles (broken to fit) and cheese mixture. Cover with 2 cups meat sauce. Top with remaining noodles (broken to fit), cheese mixture and meat sauce. Cover with lid.
  3. COOK on LOW 4 to 6 hours or until liquid is absorbed. Sprinkle with remaining cheeses; let stand, covered, 10 min. or until melted. Yield: 8 servings.
